You can find gems that have a lot of search volume and low competition, you just need to keep looking and you will eventually come across it.
Once you have found a keyword with good search volume, look at how many phrase matches the keyword has. This will give you a decently accurate count of your competition. Again, lower is better, but anything under 100,000 or so results should be easily obtainable.
The next thing you want to look at is the top 10 results for the keyword on Google. I like to use the SEOQuake plug-in for Firefox to see the information I want. What you are looking for is the page rank of the top ranking sites. If you see a bunch of PR 0, PR1, PR2, PR3 sites and even a PR 4 or two, it's most likely going to be easy enough to beat, as long as you have good on-site SEO and are building decent back links. The thing you need to watch out for is high Page Rank sites and authority sites. These are going to be hard sites to beat. You may be able to get in the top 20, but if all the top 10 sites are high PR and high authority, you will never make it to the top 10 and you won't get much traffic.
