I've had a couple of people asking me for the recipe of the rainbow cake and stuff so I thought a thread for stuff like this would be a good idea? If you want a recipe for something you can ask if anyone knows a good one or if you've made something that people ask you for the recipe of then you can post it here basically
Rainbow cake recipe.
You'll need:
- 275g (10oz) self-raising flour
- 225g (8oz) soft margarine
- 4 tablespoons of milk/water
- 1 level teaspoon of baking powder (you need a bit more raising power for this because somehow the food colouring stops it rising as much as it usually would)
- 225g (8oz) caster sugar
- 4-5 drops of vanilla essence
- 4 eggs
(For the rainbow-ness)
- Red, blue and yellow food colouring
- Sieve the flour into the bowl along with the baking powder
- Add the margarine, sugar and vanilla. Break the eggs into a separate bowl and beat - add them aswell. Mix everything well. The mixture will be quite thick because you don't add the liquid until after you've mixed the colours.
- Go and pre-heat the oven at 180°C, 350°F, Gas Mark 4 or 160°C if you have an annoying fan oven like us.
- Divide the mix into (depending on how many colours you want in your cake) relatively even amounts. When adding the food colouring, glass bowls are preferable so you can see if there are any bits you haven't mixed in
- Add the food colouring bit by bit. (Please, please use separate spoons to mix them.) You will need quite a lot to get really vibrant colours though so don't panic if you think you've accidentally poured too much; chances are it won't be enough
- Obviously you'll have to mix the primary colours to make purple, green or orange. I suggest you do this only a little at a time because otherwise you might end up with your colour too dark/too light for your liking.
- When you've mixed all of the colours that you want they will probably still be a bit thick for cake mixture (some of them may not be depending on how much food colouring you had to use to get the right colour). You can use either water or milk but I would suggest you use water; milk will make the colours lighter/more pastel coloured whereas water just thins the mixture. Add a teaspoon of the water/milk to start with, then add it only a few drops at a time until you have a cake with a 'good dropping consistency'.
- Decide what order you want your colours to go in, then pour the first colour into the bottom of a well-greased tin. Make sure it covers the bottom of the tin. Pour in the second colour; don't stir it, don't spread it or anything. Just leave it be. Pour the next one on top. Pouring it directly on top of the other colour will push the colour underneath it outwards, spreading it all by itself. Continue this until all of the mixture is in the tin. Do not smooth the top down, it will sort itself out.
- Bake it for about 40-45 mins. It might take longer than that though so don't panic if it's still uncooked after 50mins.
- Leave to cool.
- Eat rainbows.
I would suggest icing it because it's not very pretty when it comes out the oven. It does represent a brillo pad to a certain extent
